The Tagliente takes its shape from the Japanese santoku tradition: a flatter belly than a chef's knife, a sheepsfoot tip, and a Granton edge with shallow ovals stamped into both sides of the blade near the spine. Those ovals create air pockets that release potatoes, cucumber, and salmon fillets cleanly instead of clinging to the steel, which is a real problem with flat-bevel knives on wet produce. The 7-inch AUS-8 blade holds a keen edge through repeated resharpening and is honed to 16 degrees per side, slightly more acute than a Western chef's knife. The pakkawood handle is dense, water-resistant, and shaped with a subtle palm swell for extended chopping sessions. This is the knife home cooks reach for when a recipe calls for a lot of small, uniform dice.
