A wide-set serrated knife that saws through crusty loaves and delicate cakes without crushing them.

The Serrato's 9-inch blade uses a wave-ground serration pattern with alternating deep and shallow points, which grips a hard crust on first contact but doesn't tear the crumb underneath the way a fine saw-tooth blade can. The offset handle lifts the palm above the cutting line, so knuckles clear the board when slicing all the way through a wide boule or a layer cake. Blade steel is X50CrMoV15, the same alloy used in our forged chef's knives, tempered a bit softer here to keep the serration points from chipping. It handles more than bread, too, cleanly sectioning tomatoes, citrus, and delicate pastries where a straight edge would just squash the surface. Serrated edges like this one are meant to be replaced rather than resharpened at home, and the blade is priced accordingly.
