Ingredients
- 14 oz fresh or frozen udon noodles
- 3 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon oyster sauce (or vegetarian mushroom stir-fry sauce)
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 3 tablespoons vegetable oil, divided
- 1 red bell pepper, thinly sliced
- 1 small zucchini, sliced into half moons
- 1 cup shiitake mushrooms, sliced
- 2 cups baby bok choy, roughly chopped
- 3 cloves garlic, minced
- 1 tablespoon toasted sesame seeds, for garnish
Instructions
- If using frozen udon, run the noodles under warm water for 30 seconds to loosen them, or follow the package's quick-boil instructions. If using fresh, they usually need no pre-cooking beyond a quick dip in boiling water for 1 minute to separate the strands. Drain well and set aside.
- In a small bowl, whisk together the soy sauce, mirin, oyster sauce, sugar, and sesame oil until the sugar dissolves; set the sauce aside.
- Heat 1 1/2 tablespoons of the vegetable oil in a large wok or wide skillet over high heat until it shimmers and moves easily across the pan.
- Add the bell pepper and zucchini and stir-fry for 2 to 3 minutes, tossing frequently, until the vegetables are just starting to soften but still bright in color and slightly crisp when bitten.
- Add the shiitake mushrooms and cook for another 2 minutes, until they soften and release a little of their liquid.
- Push the vegetables to one side of the pan and add the remaining 1 1/2 tablespoons oil to the empty side, along with the minced garlic. Stir the garlic alone for 15 seconds until fragrant before mixing it into the vegetables.
- Add the bok choy and stir-fry for 1 to 2 minutes, just until the leafy greens wilt and the white stems turn slightly translucent at the edges.
- Add the drained udon noodles to the pan, using tongs to separate any clumps as you add them.
- Pour the sauce evenly over the noodles and vegetables. Toss continuously over high heat for 2 to 3 minutes, using tongs to lift and turn the thick noodles so the sauce coats them evenly rather than pooling underneath.
- Check a noodle for doneness - it should be soft on the outside with a satisfying chewy bite in the center, and the sauce should look glossy and mostly absorbed rather than watery.
- Remove from heat, sprinkle with toasted sesame seeds, and serve immediately in bowls while hot.
Highlights
- Fully vegetarian and ready in 30 minutes
- Thick chewy udon holds sauce beautifully
- Loaded with crisp-tender vegetables
Tip: Frozen udon needs only a brief warm-water rinse or quick boil to loosen - overcooking it turns the noodles mushy and slippery.
Tip: Keep the heat high and the tossing constant once the noodles hit the pan; this is what keeps the dish from turning soggy.
