2 sandwiches

Ingredients

  • 4 slices bacon
  • 2 large eggs
  • 1 tablespoon milk
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon unsalted butter
  • 2 English muffins, split
  • 2 slices cheddar cheese
  • 1 tablespoon butter, for toasting muffins

Instructions

  1. Lay the bacon slices in a single layer in a cold nonstick skillet, then turn the heat to medium. Starting bacon in a cold pan renders the fat more evenly and reduces splattering.
  2. Cook the bacon for 8 to 10 minutes, flipping every 2 to 3 minutes, until deeply browned and crisp at the edges. Transfer to a paper-towel-lined plate to drain, leaving the rendered bacon fat in the pan.
  3. While the bacon cooks, crack the eggs into a small bowl, add the milk, salt, and pepper, and whisk until fully combined.
  4. Pour off all but about 1 teaspoon of the bacon fat from the skillet, or wipe it clean and add the 1 teaspoon of butter instead if you prefer a milder flavor.
  5. For neat, sandwich-sized egg patties, pour the egg mixture into a small greased ring mold or a wide mason jar lid set in the skillet over low heat; if you don't have a mold, simply pour the eggs into the skillet in one round pool.
  6. Cook over low heat for 2 to 3 minutes, until the bottom and edges are set and only the very center still looks slightly wet.
  7. Fold the egg round in half using a spatula, or if using a mold, flip it carefully to cook the other side for 1 more minute. The egg is done when it is fully opaque throughout with no runny, wet patches and feels just firm to the touch.
  8. Toast the split English muffins: spread the outside cut edges with butter and toast cut-side down in a separate dry skillet over medium heat for 2 minutes, until golden brown.
  9. Immediately after removing the egg from the heat, place a slice of cheddar cheese directly on top of the hot egg so it starts to melt from residual heat.
  10. Assemble each sandwich: bottom muffin half, 2 slices of crispy bacon, the cheesy egg, and the top muffin half.
  11. Serve immediately while everything is hot, or wrap tightly in foil to keep warm for an on-the-go breakfast.

Highlights

  • Faster and cheaper than a drive-through, tastes better too
  • Folded egg patty fits neatly on the muffin without spilling out
  • Ready in 20 minutes with just two pans
Tip: Start bacon in a cold pan rather than a preheated one - it renders the fat more gradually and results in evenly crisp, flat strips with less curling.
Tip: Lay the cheese slice on the egg the moment it comes off the heat so it melts from residual warmth instead of needing extra pan time that could overcook the egg.
