Makes about 24 medium cookies

Ingredients

  • 1 cup (2 sticks / 226g) unsalted butter, melted and cooled 10 minutes
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 3/4 cups (345g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp fine salt
  • 2 cups (340g) semisweet chocolate chips
  • 1 tsp flaky sea salt, for topping (optional)

Instructions

  1. Preheat the oven to 375 F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk the melted butter, brown sugar, and granulated sugar together until smooth and no sugar lumps remain, about 1 minute.
  3. Whisk in the eggs one at a time, then the vanilla, until the mixture looks glossy and slightly lightened in color.
  4. In a separate bowl, stir together the flour, baking soda, and salt with a fork so the leaveners are evenly distributed.
  5. Add the dry ingredients to the wet ingredients and stir with a rubber spatula just until no dry streaks of flour remain - stop as soon as you stop seeing flour, since overmixing makes tough, cakey cookies.
  6. Fold in the chocolate chips by hand until evenly distributed throughout the dough.
  7. Scoop dough into 2-tablespoon balls (about the size of a golf ball) and place them 2 inches apart on the prepared sheets, 6 per sheet.
  8. Sprinkle each dough ball with a pinch of flaky salt if using, then bake one sheet at a time on the middle rack for 9 to 11 minutes.
  9. The cookies are done when the edges are set and lightly golden but the centers still look slightly underbaked and puffy - they will firm up as they cool, so do not wait for the centers to look fully set or you will overbake them.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack; they are fragile straight out of the oven and will fall apart if moved too soon.
  11. Repeat with the remaining dough, making sure the baking sheets have cooled to room temperature before adding new dough balls so the cookies do not spread too thin.

Highlights

  • No chilling required - ready in under 30 minutes
  • Melted butter gives extra-chewy texture without a mixer
  • Freezer-friendly dough for bake-when-you-want cookies
Tip: If your kitchen is warm, chill the scooped dough balls for 15 minutes before baking to prevent excess spreading.
Tip: Underbake slightly rather than overbake - pull the sheet when the centers still look soft, since carryover heat finishes the job.
