Ingredients
- 1 cup (240ml) water
- 2 1/2 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 cup (56g) unsalted butter
- 1 cup (125g) all-purpose flour
- 2 large eggs, room temperature
- 1/2 tsp vanilla extract
- 4-6 cups vegetable or canola oil, for frying
- 1/2 cup (100g) granulated sugar, for coating
- 1 tbsp ground cinnamon, for coating
- 4 oz (113g) semisweet chocolate, chopped
- 1/2 cup (120ml) heavy cream
Instructions
- In a medium saucepan, bring the water, 2 1/2 tablespoons sugar, salt, and butter to a full boil over medium heat.
- Remove from heat and add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan, about 1 minute.
- Let the dough cool for 5 minutes (it should still be warm but not hot enough to cook the eggs), then beat in the eggs one at a time, mixing hard after each addition until fully incorporated and the dough looks smooth and glossy. Beat in the vanilla.
- Transfer the dough to a piping bag fitted with a large star tip.
- Heat 2 inches of oil in a deep, heavy pot to 350 F, using a deep-fry or candy thermometer to monitor the temperature closely.
- Pipe 4 to 5-inch strips of dough directly into the hot oil, using scissors or a knife to cut the dough from the piping tip, frying 3 to 4 churros at a time so the oil temperature does not drop too much.
- Fry for 2 to 3 minutes per side, turning once, until deep golden brown all over and puffed - if they brown too fast the oil is too hot, and if they absorb a lot of oil and stay pale, the oil is too cool.
- Remove with a slotted spoon or spider to a paper-towel-lined plate to drain briefly.
- While still hot, roll each churro in the cinnamon-sugar mixture (combine the 1/2 cup sugar and cinnamon in a shallow dish) until fully coated - the sugar sticks best while the churros are still warm and slightly oily.
- For the chocolate sauce, heat the heavy cream in a small saucepan until steaming, then pour over the chopped chocolate in a bowl. Let sit for 2 minutes, then whisk until smooth and glossy.
- Serve the churros warm alongside the chocolate sauce for dipping.
Highlights
- Crisp exterior, tender interior, no yeast or rise time
- Piped with a star tip for the classic ridged shape
- Rich dipping chocolate ready in minutes
Tip: Keep a thermometer in the oil at all times - churros fried above 375 F burn on the outside before the inside cooks through.
Tip: Coat the churros in cinnamon sugar while they are still hot and glistening; once they cool, the sugar will not stick evenly.
