Chocolate Souffle
A dramatic, cloud-light dessert that rises tall in the oven and should be eaten within minutes of coming out, when the center is still molten. Intimidating by reputation but really just a well-folded meringue.

Four 8-ounce ramekins
Ingredients
- 2 tbsp unsalted butter, softened (for greasing ramekins)
- 1/4 cup (50g) granulated sugar, plus more for coating ramekins
Instructions
- Preheat the oven to 400 F and place a baking sheet inside to preheat as well. Generously butter four 8-ounce ramekins, brushing in upward strokes from bottom to rim, then coat with granulated sugar, tapping out the excess - this texture helps the souffle climb the sides.
