Two 9-inch round layers
Ingredients
- 2 cups (250g) all-purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1 1/4 cups (300ml) vegetable oil
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed brown sugar
- 4 large eggs, room temperature
- 3 cups (300g) carrots, peeled and finely grated (about 5-6 medium)
- 1 cup (100g) walnuts, toasted and chopped
- 8 oz (226g) cream cheese, softened
- 1/2 cup (1 stick / 113g) unsalted butter, softened
- 3 1/2 cups (420g) powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 F. Grease two 9-inch round cake pans and line the bottoms with parchment paper circles.
- Whisk together the flour, baking soda, cinnamon, ginger, and salt in a bowl.
- In a large bowl, whisk the vegetable oil, granulated sugar, and brown sugar together until combined.
- Whisk in the eggs one at a time until the mixture looks smooth and slightly thickened.
- Add the dry ingredients to the wet ingredients and stir with a spatula just until no streaks of flour remain.
- Fold in the grated carrots and toasted walnuts by hand until evenly distributed.
- Divide the batter evenly between the two prepared pans and smooth the tops.
- Bake for 30 to 35 minutes, until a toothpick inserted in the center of each cake comes out clean and the tops spring back when pressed lightly.
- Cool the cakes in the pans for 15 minutes, then run a knife around the edges and turn out onto a wire rack to cool completely, at least 1 hour, before frosting.
- For the frosting, beat the softened cream cheese and butter together until smooth and no lumps remain, about 2 minutes.
- Gradually add the powdered sugar, beating on low speed to avoid a sugar cloud, then increase speed and beat in the vanilla until light and spreadable, about 1 minute.
- Place one cake layer on a serving plate, spread about 1 cup of frosting evenly over the top, then place the second layer on top. Frost the top and sides with the remaining frosting using an offset spatula.
Highlights
- Freshly grated carrots and toasted walnuts for texture
- Tangy cream cheese frosting balances the sweetness
- Moist enough to skip a soaking syrup entirely
Tip: Grate the carrots finely and by hand or with a box grater - pre-shredded bagged carrots are drier and give a coarser, less moist crumb.
Tip: Make sure both cake layers are completely cool before frosting, or the frosting will melt and slide right off.
