A 14-inch hand-hammered carbon steel wok built for high-heat stir-frying.

Hand-hammered from a single sheet of carbon steel, this wok is thin enough to heat up fast and respond quickly to changes in flame, which is essential for proper stir-frying and wok hei. The rounded bottom is best suited to gas burners or a wok ring on electric coils, letting oil pool at the center for searing meat and vegetables in quick batches. A long wooden helper handle keeps hands away from the heat while tossing ingredients, and a small stainless steel loop handle on the opposite side aids in lifting and pouring. Like cast iron, carbon steel requires initial seasoning but develops a natural non-stick patina with regular use and proper care. Its light weight compared to cast iron makes it easier to toss food with the traditional flicking motion used in stir-fry cooking.
