Ingredients
- 1 lb large shrimp, peeled and deveined, tails removed
- 12 oz linguine pasta
- 4 tbsp unsalted butter, divided
- 3 tbsp olive oil
- 6 garlic cloves, thinly sliced
- 1/2 tsp red pepper flakes
- 1/2 cup dry white wine
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley, chopped
- 3/4 tsp salt, plus more for pasta water
- 1/4 tsp black pepper
- 1/4 cup grated parmesan, optional
Instructions
- Bring a large pot of water to a rolling boil and season generously with salt, about 2 tablespoons for 4 quarts of water. Cook the linguine according to the package directions until al dente, then reserve 1 cup of the pasta water before draining.
- While the pasta cooks, pat the shrimp dry with paper towels and season with the salt and pepper; dry shrimp sear better than wet ones.
- Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat until the butter is melted and just starting to foam.
- Add the shrimp in a single layer and cook for 1 to 2 minutes per side, until they turn pink and opaque and curl into a loose C shape. Remove them to a plate immediately; overcooked shrimp turn rubbery and curl into a tight O shape.
- Reduce the heat to medium and add the garlic and red pepper flakes to the same skillet. Cook, stirring constantly, for 30 to 45 seconds until fragrant but not browned, since burnt garlic turns bitter.
- Pour in the white wine, scraping up any browned bits from the bottom of the pan, and simmer for 2 to 3 minutes until it reduces by about half.
- Stir in the remaining 2 tablespoons butter, lemon zest, and lemon juice, whisking until the butter melts into a glossy sauce.
- Return the shrimp to the skillet along with any accumulated juices, and toss to coat and warm through, about 1 minute.
- Add the drained linguine to the skillet along with a splash of the reserved pasta water, tossing with tongs until the noodles are well coated and the sauce clings.
- Stir in the chopped parsley, taste and adjust salt, then serve immediately topped with parmesan if using.
Highlights
- Ready start to finish in about 25 minutes
- Bright garlic-lemon butter sauce
- Shrimp stay tender and juicy, never rubbery
Tip: Pull the shrimp off the heat as soon as they turn pink and form a loose C shape; they finish cooking gently when returned to the sauce.
Tip: Save pasta water before draining, its starch helps the sauce cling to the noodles instead of pooling at the bottom of the bowl.
