4 fillets, about 6 oz each
Ingredients
- 4 (6 oz) cod fillets, skin removed
- 2 tbsp olive oil, divided
- 3 tbsp unsalted butter, melted
- 2 garlic cloves, minced
- 1 lemon, zested and sliced
- 2 tbsp fresh lemon juice
- 1/2 cup panko breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 pinch of paprika
Instructions
- Preheat your oven to 400F and set a rack in the middle position. Line a 9x13 inch baking dish with parchment paper or lightly grease it with 1 tablespoon of the olive oil.
- Pat the cod fillets completely dry with paper towels; this helps them brown instead of steam. Arrange them in a single layer in the prepared dish, leaving space between each piece.
- In a small bowl, whisk together the melted butter, remaining 1 tablespoon olive oil, minced garlic, lemon zest, and lemon juice. Season the fish evenly with the salt and pepper on both sides.
- Pour the butter mixture evenly over the fillets, using a spoon to coat the tops. Scatter the lemon slices over and around the fish.
- In a separate small bowl, mix the panko, parsley, oregano, and paprika together, then press a thin, even layer onto the top of each fillet.
- Bake uncovered for 15 to 18 minutes, checking at the 15-minute mark for thinner fillets. The fish is done when it flakes easily with a fork and reaches an internal temperature of 145F at the thickest part.
- If the topping is not golden by the time the fish is cooked through, switch the oven to broil for 1 to 2 minutes, watching constantly to avoid burning the breadcrumbs.
- Remove from the oven and let the fish rest in the dish for 2 minutes before serving; this lets the juices settle so the fillets hold together.
- Spoon any pan juices over the fish when plating for extra flavor.
- Serve immediately with the roasted lemon slices alongside for squeezing over the top.
Highlights
- Ready in under 30 minutes with pantry staples
- Crisp breadcrumb topping over tender, flaky fish
- No special equipment needed
Tip: Do not overcook: cod goes from moist to dry fast once it passes 145F, so start checking a couple minutes early.
Tip: Pat the fillets very dry before adding toppings so the breadcrumbs crisp instead of turning soggy.
