12 skewers
Ingredients
- 1.5 lb boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/3 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp rice vinegar
- 1 tbsp vegetable oil
- 1 tsp toasted sesame oil
- 1/4 tsp black pepper
- 12 wooden or metal skewers
- 1 tbsp sesame seeds, for garnish
- 2 scallions, thinly sliced, for garnish
Instructions
- If using wooden skewers, soak them in water for at least 20 minutes so they do not burn on the grill.
- In a medium bowl, whisk together the honey, soy sauce, garlic, ginger, rice vinegar, vegetable oil, sesame oil, and black pepper to make the marinade.
- Pour half of the marinade into a separate bowl and set aside to use later as a basting and dipping sauce; do not reuse marinade that has touched raw chicken for the sauce.
- Add the chicken cubes to the remaining marinade, toss to coat well, cover, and refrigerate for at least 20 minutes and up to 4 hours.
- Thread the marinated chicken pieces onto the soaked skewers, about 4 to 5 pieces per skewer, leaving small gaps between pieces for even cooking.
- Preheat a grill, grill pan, or broiler to medium-high heat, around 400 F, and lightly oil the grates or pan.
- Place the skewers on the hot grill and cook for 5 to 6 minutes per side, turning once, brushing with the reserved sauce during the last few minutes of cooking.
- The chicken is done when it reaches an internal temperature of 165 F on an instant-read thermometer and the surface has visible golden-brown char marks.
- Transfer the cooked skewers to a platter and brush once more with any remaining reserved sauce.
- Sprinkle with sesame seeds and sliced scallions before serving warm.
Highlights
- Sticky-sweet glaze with real char flavor
- Thighs stay juicy even if slightly overcooked
- Great hot or at room temperature for parties
Tip: Always keep the marinade that touched raw chicken separate from the sauce used for basting near the end or serving.
Tip: Chicken thighs are more forgiving than breast meat and stay tender even if a skewer cooks a minute longer than planned.
