24 skewers
Ingredients
- 24 cherry tomatoes
- 24 small fresh mozzarella balls (ciliegine)
- 24 fresh basil leaves
- 24 small cocktail skewers or toothpicks
- 1 cup balsamic vinegar
- 1 tbsp honey
- 3 tbsp extra-virgin olive oil
- 1/2 tsp flaky sea salt
- 1/4 tsp black pepper, freshly cracked
Instructions
- Pour the balsamic vinegar and honey into a small saucepan and bring to a gentle simmer over medium heat.
- Reduce the heat to low and simmer for 8 to 10 minutes, stirring occasionally, until the liquid has reduced by about half and coats the back of a spoon in a thick, syrupy glaze.
- Watch closely toward the end, since balsamic reduction can go from perfectly thick to burnt very quickly once it gets syrupy.
- Remove the glaze from the heat and let it cool for about 10 minutes; it will thicken further as it cools.
- Drain the cherry tomatoes and mozzarella balls well on paper towels to remove excess moisture.
- Pat the basil leaves dry gently between paper towels as well, since wet leaves will dilute the olive oil drizzle later.
- Thread onto each skewer, in order: one cherry tomato, one folded basil leaf, and one mozzarella ball.
- Arrange all the assembled skewers on a large serving platter.
- Drizzle the olive oil evenly over the skewers, followed by the cooled balsamic glaze in thin zigzag lines.
- Sprinkle with flaky sea salt and freshly cracked black pepper just before serving.
Highlights
- No cooking required except the quick glaze
- Bright, fresh, elegant presentation
- Ready in under 30 minutes
Tip: Watch the balsamic reduction closely in the final 2 minutes; it thickens fast and can scorch if left unattended.
Tip: Assemble skewers no more than 2 hours ahead and add the glaze and salt just before serving to keep the basil from wilting.
