About 24 shrimp
Ingredients
- 1.5 lb jumbo shrimp (16-20 count), peeled and deveined, tails on
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
- 8 metal skewers (or wooden skewers, soaked 30 minutes)
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning and snapping.
- Pat the shrimp completely dry with paper towels; excess moisture will cause steaming instead of a good sear.
- In a large bowl, toss the shrimp with olive oil, smoked paprika, salt, and pepper until evenly coated.
- Thread 5-6 shrimp onto each skewer, piercing through both the thick and tail end of each shrimp so they lie flat and do not spin when you flip them.
- Preheat the grill to high, around 450-500F, and clean and oil the grates well.
- Place skewers directly over the heat and grill for 2-3 minutes on the first side; you will see the shrimp turn from translucent gray to opaque pink starting at the edges.
- Flip the skewers once and grill for another 2-3 minutes on the second side; total cook time for shrimp this size is usually just 5-6 minutes.
- Shrimp are done when they form a loose 'C' shape and are opaque all the way through; a tight, curled-up 'O' shape means they are overcooked and will taste rubbery, so pull them as soon as they curl gently.
- While the shrimp grill, melt butter in a small saucepan over low heat, add minced garlic, and cook for 30-60 seconds just until fragrant, taking care not to let it brown or burn.
- Remove the pan from heat and stir in lemon juice.
- Transfer the grilled shrimp skewers to a platter, drizzle with the warm garlic butter, and sprinkle with fresh parsley before serving immediately.
Highlights
- Ready start to finish in about 20 minutes
- High, fast heat keeps shrimp tender instead of rubbery
- Warm garlic butter finish adds instant richness
Tip: Watch shrimp closely near the end; they go from perfectly cooked to overdone in under a minute on a hot grill.
Tip: Double-skewer larger shrimp (a skewer through both ends) so they stay flat and are easy to flip all at once.
