Grilled Cedar Plank Salmon

Salmon fillets grilled on a soaked cedar plank so they cook gently in fragrant smoke instead of directly over flame, staying moist and never sticking to the grates. An easy, elegant way to grill fish for the first time.

Ingredients

  • 1 untreated cedar grilling plank
  • 4 salmon fillets, skin-on (6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 lemon, half juiced and half sliced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh dill

Instructions

  1. Submerge the cedar plank fully in water for at least 1 hour, weighing it down with a heavy plate so it does not float; a properly soaked plank smokes instead of catching fire.
  2. Pat the salmon fillets dry and place them skin-side down on a plate.
  3. In a small bowl, whisk together olive oil, honey, Dijon mustard, minced garlic, lemon juice, salt, and pepper to make a glaze.
  4. Brush the glaze generously over the top and sides of each fillet, reserving a couple tablespoons for basting later.
  5. Preheat the grill to medium-high, about 400F, and set it up for direct heat.
  6. Remove the plank from the water and shake off excess, then place it directly on the hot grill grates and close the lid for 3-5 minutes until it starts to crackle and smoke lightly.
  7. Place the glazed salmon fillets skin-side down on the smoking plank, spacing them so they do not touch.
  8. Close the grill lid and cook for 12-15 minutes without flipping; the plank protects the delicate flesh from direct flame and the fish gently steams and smokes at the same time.
  9. Baste with the reserved glaze once halfway through cooking for extra shine and flavor.
  10. Check doneness with an instant-read thermometer inserted into the thickest part; salmon is done at 125-130F for a moist, medium center, or 145F if you prefer it well done, and it should flake easily with a fork.
  11. Keep a spray bottle of water nearby in case the plank edges catch fire; lightly mist any flare-up rather than removing the plank.
  12. Carefully slide the plank off the grill using heat-resistant gloves, top the salmon with lemon slices and fresh dill, and serve directly from the plank.

Highlights

  • Cedar plank infuses gentle smoky flavor without direct flame
  • No flipping means no risk of the delicate fish falling apart
  • Honey-Dijon glaze caramelizes beautifully under the lid
Tip: Soak the plank for at least an hour, longer if you have time, to reduce the risk of it igniting outright.
Tip: Pull the salmon a few degrees before your target temperature since it continues cooking from residual heat on the hot plank.
